Avocado Cacao Shortcake

I enjoy adding avocados to any recipe with almond flour. It improves texture and adds lots of healthy fat.

Ingredients

  • Shortcake
  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 2 tablespoons cacao powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 eggs
  • Liquid or powder stevia to taste
  • Frosting
  • 2-3 avocados
  • 1/2 cup cacao powder
  • Liquid or powder stevia to taste

Instructions

  1. Preheat oven to 300 degrees
  2. Combine flours, cacao powder, salt, baking soda, and sweetener in food processor.
  3. Process.
  4. Add eggs and process again.
  5. Use scoop (several tablespoons in size) to place on baking sheet lined with parchment paper.
  6. Bake 12-15 minutes.
  7. While baking, prepare frosting.
  8. Combine avocados, cacao powder and sweetener. Blend using stick blender or food processor.
  9. After shortcake is removed and cooled, add frosting and serve.
  10. Enjoy!
