Grain-free, Sugar-free Yellow Cake
I enjoy the taste and texture of this yellow cake - especially when I add my special chocolate frosting!
Ingredients
- Cake
- 6 eggs
- 3/4 cup almond meal
- 2 tablespoons melted butter or coconut oil
- 1 vanilla bean
- sweetener to taste (I like xylitol and stevia.)
- Frosting
- 1/4 cup cacao paste (You can substitute 1/4 cup cacao butter and 1/4 cup cacao powder.)
- sweetener to taste
Instructions
- Preheat oven to 375 degrees.
- Combine all ingredients in a bowl. (Scrape vanilla bean into the bowl.)
- Blend. The texture should be slightly liquid.
- Pour into parchment lined or greased loaf pan or 8X8 parchment lined or greased pan.
- Bake 15-25 minutes. Check every five minutes till cake remains slightly doughy.
- Remove from oven and allow to cool while you make the frosting.
- To make the frosting, melt ingredients over low heat till nicely blended.
- Frost cake and put in the freezer until chocolate solidifies.
- Add whipped cream if desired.
- Enjoy!
